People often ask me how I do all of the things I do and still stay sane. Sometimes I wonder myself. The reality is that it takes a whole lot of warding off crazy with mindfulness, therapy, and amazing friends! If anyone would have told younger me that I'd be a full-time student, step-mom, wife and tutor in my late 30's I would have laughed. But, after countless jobs and opportunities that were leaving me feeling uninspired, one day I wondered what the heck I wanted to be when I grew up. What I saw when I looked around convinced me that a degree would finally need to be added to my to-do list. So, I enrolled in the local community college and started my first online class days later. As a person living with Celiac disease, taking a nutrition class from a dynamic professor, it clicked that I had found my calling... In that moment I knew that I want to be a dietitian when I grow up! Today I take classes to reach my goal, help pass along lessons learned from my path to others, cook and garden my way through - all while living a gluten free life.
